Easy Vegetarian Recipes for Healthy Living

Easy vegetarian recipes for the whole family to enjoy this Easter.

Bulgar, Beets and Feta Salad with Homemade Beetroot houmous 

Kcals 353, 15g protein, 39g carbs, 13.5g fat

Ingredients

50g Bulgar

1 garlic clove, crushed

1 tsp apple cider vinegar

1/2 bunch chopped mint

1 large spring onion, finely chopped

4 roughly chopped walnuts

2 cooked beetroots chopped

40 feta crumbled

2 oranges – juice and zest

Houmous ingredients (serves 6)

2 garlic cloves

2 beetroot

1 large jar of chickpeas

1/2 cumin

1 tablespoon sesame seeds

Juice of 2 lemons

Salt and pepper

1. Place bulgar in a pan, cover with water and bring to the boil, simmer for 5 mins and then leave with the lid on until the grains are soft, drain any excess liquid and place into a large bowl

2. Mix all of the other ingredients into the bulgar reserving a little feta, some mint and walnuts to garnish

3. Make the houmous by placing all the ingredients into a food processor until desired consistency, if needed add water to loosen

4. Plate up the bulgar mix and top with the houmous, garnish with mint leaves, walnuts and feta
