Vegan Recipes – Homemade granola with peach whipped cream

New Recipe – Homemade Granola with Peach Whipped Cream

100% vegan + refined sugar free = yummy

Here’s what you’ll need

 

150 grams of each

Cashew nuts

Almonds

pumpkin seeds

sesame seeds

sunflower seeds

Goji Berries

For the superfood juice mixer

2 tablespoons Manuka Honey

150ml of filtered water

optional 2 tablespoons coconut sugar

1 tablespoon of superfood of choice (Baobab powder recommended for the Autumn months as it is rich in Vitamin C and antioxidants)

Peach Whipped Cream topping

1 peach

handful of cashews

dash of chosen nut milk

Now all you need to do is:

 

Mix all the nuts and seeds onto a baking tray

Add the superfood mix into a pan and heat on the hob until the honey is melted about 2 minutes max

Add the superfood mix to the baking tray and fold it in to the mixture evenly

Cook at 160 degrees in the oven for 20-25 minutes check occasionally

Whilst this is cooking Yogini’s here’s the fun part

Mix the peach, cashews and chosen nut butter in a food processor

After 25 minutes remove the golden brown granola from the oven and leave to cool

YYG TOP TIP – stir occasionally so it doesn’t stick to the tray – add it to a beautiful glass jar and leave on the kitchen surface so you can enjoy your motivation and choice to live healthier

Serve with a splashing of almond milk and a scoop of the peach whipped cream on top. If you need a little bit of sugar add some grated dark chocolate over the top
